Turkey Reuben Sandwiches

Looking for Super Bowl serving ideas? These turkey Reuben sandwiches are easy enough to whip up during halftime.
The traditional Reuben is piled high with corned beef, Swiss cheese and sauerkraut and slathered with Russian dressing. Our version is made with lean turkey pastrami, low-fat Swiss cheese and a Russian dressing made with low-fat mayonnaise. Accompany the sandwiches with big wedges of dill pickles and raw vegetables such as celery and carrot sticks.
Ask the deli department or butcher at your store to slice the turkey pastrami paper-thin. And if you make the sandwiches ahead and refrigerate them in plastic wrap, you won’t have to miss the halftime show.
Combine mayonnaise, chili sauce and pickle relish. Spread dressing on each slice bread.
Top each of 2 slices bread with 1 1/2 ounces turkey pastrami, 1/3 cup sauerkraut and 1/2 slice Swiss cheese. Cover each with 1 slice bread to make sandwich. Spray top bread slices with cooking spray. Put sandwiches, sprayed side down, in preheated skillet sprayed with cooking spray. Cook over medium-low heat until bread is golden brown, 5 to 6 minutes, then turn to brown other side.
Cut sandwiches into thirds and serve with dill pickles.
