RETAIL / TOURISM : P.J.’s Eatery Looking to Expand ‘Mexican Sizzler’ Concept

A popular El Toro Mexican restaurant plans to expand to four other locations in the county.
P.J.’s Casa Fiesta, a 47-seat quick-service eatery on El Toro Road, has operated in the Saddleback Shopping Center for four years. Now, owner J.D. Williams said he plans to expand the restaurant concept that he describes as being like “a Mexican Sizzler.”
By taking on limited partners, Williams said, he is less worried about financing than he is in finding adequate sites. “We got a bat and ball and some bases. All we need is a ballpark,” Williams said.
Some hungry fans wouldn’t hurt, either.
