Indian Spinach Salad Is a Real Family Pleaser

“Here is my best and most-often-asked-for recipe,” Diane J. Berk writes.
INDIAN SPINACH SALAD
1/2 cup white wine vinegar
3 tablespoons chopped chutney
1 teaspoon dry mustard
2 teaspoons curry powder
1/4 teaspoon hot pepper sauce
2/3 cup oil
1/2 teaspoon salt
3 bunches spinach, washed and trimmed
2 large Delicious apples, sliced thinly
2/3 cup dry roasted peanuts
1/2 cup golden raisins
1/2 cup finely sliced green onions
3 tablespoons sesame seeds
Combine wine vinegar, chutney, mustard, curry powder, hot pepper sauce, oil and salt. Mix well and chill until ready to serve.
In salad bowl combine spinach, apples, peanuts, raisins, green onions and sesame seeds. Serve and toss with prepared dressing. Makes 4 to 6 servings as side dish and 2 to 3 servings as main dish.
