Curried Spinach Soup Makes Tasty Healthful Appetizer

Take the edge off dinner appetites with this nutritious Curried Spinach Soup. At about 200 calories per serving, it is a good source of vitamins A and C.
CURRIED SPINACH SOUP
4 cups water
2 bunches spinach, chopped
2 tablespoons oil
1/2 cup thinly sliced onion
1/2 cup evaporated milk
1 teaspoon curry powder, or to taste
1 cup cooked rice
1/2 teaspoon salt
Lemon wedges
Bring water to boil, add spinach and simmer 5 to 7 minutes.
Meanwhile, heat oil in skillet. Add onions and cook until transparent. Add cooked onions along with milk, curry powder, rice and salt to spinach. Heat thoroughly. Serve with lemon wedges. Makes 4 servings.
